
Brett Carroll
Brett Joined TCS in 1998 and held various positions from Production Manager, Operations Manager and is now the current General Manager.
Following numerous Management training courses at the Australian Institute of Management, to further build on his management skills, Brett recently joined the Master of Business Administration program at ECU and has just completed the Graduate Certificate in Business Management.
Brett is also a Qualified chef, with a wealth of experience gained from various Executive Chef appointments in establishments throughout Australia from large scale commercial catering in Perth to five star hotels in Brisbane.
As a keen supporter of the Western Australian food manufacturing industry, until recently Brett was Deputy Chairman of Hospitality Group Training and chaired the finance sub committee for many years.

Ian Doughty
Ian has worked with Total Catering Solutions since 2006, firstly as their food safety program auditor and then as their consultant undertaking part time work to help them improve and mature the program.
Ian has extensive experience both in the public and private sector of the food industry, both in England and Australia. As an Enforcement Officer in the public sector Ian has been responsible for interpreting and enforcing food legislation in a variety of facilities including export meat, poultry and fish factories and diary, manufacturing, wholesale, hospital, retail and catering establishments.
This experience is now used to assist the private sector to meet legislative requirements and maintain food safety systems to ensure they produce safe and suitable food at all times.
Holding a degree in Environmental Health, a Diploma in Management Studies and a Certificate in Health Education, Ian is also a Regulatory Food Safety Auditor in Western Australia which, together with working with other clients in different areas of the food industry, helps him to keep current with all food safety developments as they occur.
